
Dubai Chocolate Recipe
Impress your friends & family with the homemade Dubai Chocolate bar. It takes patience and good equipment to make it at home. Phoewa did not have it all, but the result was amazing. This homemade version chocolate bar is made of milk chocolate and white chocolate, with a filling of Pistachio and Kadayif. It is a good recipe under €20,- bucks to make. You will buy the amount of chocolate depending on the chocolate mould you are using. You will work the most with the milk chocolate and use the white chocolate to give it a marble look. You don’t want to end up with less milk chocolate at the end so try to buy enough. For your first time you will need around 500 grams of milk chocolate, and 200 grams of white chocolate. For the filling 100 grams of pistachio to mix with approximately 200 grams of kadayif. You will bake the kadayif in 150 grams of cream butter. Other than that you will need a good chocolate mould and a freezer to cool your chocolate bar.

Steps to Dubai Chocolate
Start with your chocolate:

Melt the chocolate in the microwave or melt it au bain-marie.

Get your chocolate mould and use a spoon to make a marble design with the white chocolate.

Temper your milk chocolate.

Pour a thin layer of chocolate over your chocolate mould so every inner part is covered with chocolate.

Put the chocolate mould in the freezer.
While your chocolate is setting in the freezer:

Cut your Kadayif in small pieces.

Take a pan and put some cream butter in it.

Bake your Kadayif golden brown till it’s crunchy.

When it’s baked let it cool down.

Mix your pistachio past with the Kadayif.
It is time to fill the Home Made Chocolate Bar

Get the chocolate mould out of the freezer.

Fill your crunchy Kadayif Pistachio filling into the chocolate bar.

Fill the bottom of the chocolate bar with the milk chocolate and smooth it out.

Pound the chocolate bar a few times on the counter to get the air bubbles out of the bar.

Put your chocolate bar in the freezer for 15 minutes and then gently get it out of the mould to eat!
There are different ways to melt your chocolate. You can do it in the microwave, but that takes a lot of precision. Watch my youtube video, where I make the Dubai Chocolate for the first time, you can see everything that went wrong making it. Including the explosion of my bowl in which I was melting the chocolate. There is a technique to follow while working with chocolate. You can also consider melting it an au bain-marie way. In the video I did it wrong, but Phoewa will make a video where things are going better. This is just a friendly reminder to be relaxed while cooking & baking, and enjoy the moment as it is.
TIPS & TRICKS

For your first time use cheap chocolates to try the recipe.

Make some splatters of chocolate in your mould for a design and let it freeze for a while. Then you apply a new layer of chocolate.

Do not touch you mould long with your hands when you get it out of the freezer. The heat will make the chocolate melt.
